Now, on to the VIEWS:
TO SUPPLEMENT OR NOT TO SUPPLEMENT?
THAT IS THE QUESTION.....
......I hear so often!
The common answer here in our society, is TO SUPPLEMENT! When I worked in the Vitamin Dept at Savemart, it was a "given" that just about everyone who walked those aisles took supplements, and thought they were doing a wonderful, healthy thing. When I would "suggest" otherwise, they would always express shock and disbelief and sometimes disagreement.
I don't agree with the approach of: 'I have a vit. D deficiency, therefore, I need to take a Vit D supplement.' ' I have weak bones, therefore I need to take a cal/mag supplement, with strontium in it.' 'I am low in potassium and phosphorus and magnesium, as is evidenced by my nightly charlie horse leg cramps, therefore I need to take a supplement with lots of those and additional trace minerals in it.' Or even this: 'I get mouth sores if I go even a few days without taking my multi, therefore I need to make sure I always take my multi.'
You could take those supplements and they would be "helpful." But those conditions you are finding yourself in are indications of things gone wrong in your body. They are red flags of often serious malfunctions. Taking supplements to fill the gaps, in my opinion, is to be done only temporarily, during the time you are investigating your situation and discovering what changes you need to make in your diet, lifestyle, and approach to health - eliminate medications, etc. Our bodies will work perfectly well, in most ALL cases, once they are detoxed and alkalized. Maybe your not assimilating your food properly; maybe you just plain aren't getting the right foods in your diet to begin with! Maybe you have other underlying situations that need to be remedied, so things will work together how God intended them. I'm not saying it is easy. In some cases it is very easy. In some cases, it is quite difficult and trying. Some of it depends on the attitude; sometimes the perspective; most all of the time, the length of time the compromises in health have been happening.
To the disbelief of many -- maybe including you -- it does not often depend on the "seriousness" of the health issue. I've seen persons with cancers, severe osteoporosis, Parkinson's, cirrhosis of the liver, avascular necrosis, and other 'serious' and often life-threatening diseases, turn their lives around and have total health restored. My mentor, the late Luelle Hamilton once had the longest living AIDS patient under her care, due to the approach she took of diet and detoxing and alkalizing. I, myself, have had clients whose doctors gave them bleak prognoses of surgery, amputation of limbs, a life of harmful meds, a reduced quality of life, etc. They were able to turn their health around with the simplest of methods. But still, 'simple' doesn't necessarily mean 'easy.' The hard part is the discipline required to make changes. I urge a 'baby steps' approach in most all cases, but even these baby steps are often met with disgruntled attitudes.... UNTIL the person starts seeing improvement. Then of course there is motivation to move along more quickly. But still, the pace that often gives the best results is gradual. Don't try to force your body out of its dependence on chemicals. Ease it out of it. An exception would be artificial sweeteners, colors, flavors and MSG. I don't see a reason NOT to go "cold turkey" off of these toxins. They are something to be rid of immediately and permanently. But even sugar reduction works better at a gradual rate. Your body has time to readjust then.
Then, what about if you want to take some supplements while you're making changes to your lifestyle, diet, etc.?
What makes one supplement better or worse than another? What it's made of and how it's made. that simple.
When you are buying VITAMIN and MINERAL supplements, make sure they are made out of WHOLE FOOD.... just food. These are much more pricey, but they have ingredients in them that cannot be listed on the bottle, because they are still unrecognized, if it's the whole piece of actual food. You get the whole orange, the whole grape, the whole apple, the whole sea weed, the whole herb, the whole broccoli, etc. Don't be misled by the ones that say "with food" or "extracted from" or "isolated from" or any other wording which indicates that the food was there originally, and maybe the nutrient was in it, but now just the nutrient is there without its co-inhabitants and whole food package. Or there is a little food thrown in with a bunch of isolated, laboratory-formed nutrients. Try to make sure it is a private label company that is risking its own name on the label, and not some mass-produced multi-label brand that sells its stuff really cheap because it is really cheap! You really do get what you pay for..... and some of those other ones are not only NOT GOOD, but they are BAD! This is because of the HOW... the way it is processed makes a load of difference. It can mean they use extraordinary levels of heat, or exposure to oxygen or fractionization processes or whatever, in order to get their product into its final form. What kind of 'pill' is it? capsule, softgel, tablet.... does it have an enteric coating? .... what binders do they use? some of the best companies use NO binders! is there hidden soy, corn or wheat? lots of choices, not enough time to differentiate good from bad, in most cases.
The only times I suggest a supplement not made entirely out of food, is when it is a really good quality blend of things that is to be used for a specific purpose for a limited space of time. For instance, LIFE EXTENSION is a great company that has specialized products that help with specific diseases and situations. It is run by doctors who know the meaning of the word! They have exposed the truth in western medicine for quite a long time, and they are ultimately about seeing people heal, not be dependent on their products, or at least it seems to me. I've suggested things like their Endothelial Defense, which has a great track record of opening up arteries, smoothing the sides, getting blood flow where it wasn't before, etc. So, for someone with certain heart conditions and more, I will suggest taking this along with other changes and additions, while they are getting some other changes under way. Life Extension also has products that I have suggested for to make things easier while helping people lose weight and wean themselves of anti-depressants. So, even though I do come off as "anti-supplement" at times, you can see that I do understand the value of certain supplemental products.
Along with that thought, there are some foods which some people just will not get into their diet, and so supplementation is almost necessary. Omega 3 fatty acids are some of those. If you are not willing to change your diet to include real foods from the best sources, you will simply just not be getting enough of these essential factors in your diet. Fish oil, flax oil, are some of the normal supplements for this situation. However:
When you are buying OILS and HERBS, be extra picky! Oils and herbs ARE FOOD! And, depending on what animal and plant they came from, how those live organisms lived, ate and died, how the products they gave us were processed, it makes a big difference. In fact, I believe that many of the cheap oils on the market (fish, flax, chia, evening primrose, etc.) are rancid, and therefore go beyond "not good" to "harmful." And the cheap herbs, I believe, are very inferior due to where and how they were grown, harvested, processed and packed. Many have even been found to be moldy. Learn the companies that are solid, established, private label companies that have a stake in the quality of their products. There are good ones out there: Herbs of Light, Himalaya, New Chapter, Mega Food, Garden of Life, are some of my favorites. Carlson and Natural Factors also have oils that I feel OK about selling to people. Flora is another great, old, company with very reliable products, both of oils and herbs. Locally, Savemart on Roseville Rd and Fruitville Pike offers a huge selection of the good and the bad, all at the lowest prices on the planet, for the most part. I am thrilled to be able to offer a growing number of quality items "at Savemart prices!"
Some of these items go beyond being a "supplement" to actually part of your diet. When you are taking herbs and oils in addition to your diet of whole foods, I don't look at them solely as "supplements." I hope you can see the difference. For instance, you are probably not going to grow a moringa tree (I am!) and use the leaves and fruit and seeds directly from the plant, so I think using the powder from a reliable source is a great way to get the nutrients into your body without growing the tree yourself. The same with chia seeds. I use a lot of chia seeds in cooking and eating on a regular basis. Some might consider that supplementation. Or you might just realize that it's part of the diet or part of a recipe. You can do that with moringa and a lot of oils and herbs. I prefer to use them in that form, rather than take them as pills, but they are nutrients that are needed in your diet and you need to try to get them in one way or another. If you are not able or willing to get them in as a food, then taking them in a pill form at least will get them into you!
Well, I think this will close this newsletter. I hope you have found it useful and I would love to hear from you.
If you are local, or close enough to make a trip on the 28th feasible, I hope you can make it to the FOOD CLASS (above).
Feel free to PASS THIS ON to anyone you feel might be interested!
Many blessings!!

The effects of pH on body fat
I had planned on writing a piece on this topic, but have not had the time to dedicate to researching it the way it deserves. I'm really excited, though, about what I've found in a number of books and articles and anecdotal experiences so far. I have attached a pdf of an article on it that makes a lot of sense. Though I disagree with the general consensus the author assumes about animal products producing acidic tissue, and therefore, excess body fat, the gist of the article is right on, I believe. There are references given that you can use for more, in-depth study on your own, if you wish. But, basically, the author agrees with what I suggest as a way to deal with any and all sicknesses and issues keeping the body from being at its best, including excess body fat: alkalize and detox!! My consistent words of wisdom regarding weight loss: "If you aim at True Health, you WILL lose weight; But if you aim at Losing Weight, you will NOT often get True Health."
Hope to see you at the CLCHM production of JANE EYRE! March 10-12 the Theatre at Liberty Place, 313 W. Liberty St., downtown Lancaster

What is pH? What does it mean for you?
Sue Whitney
Your Body's pH determines your health
What does body pH really mean? How is it determined? How can I help to control my own body's pH?
Let us start at the very beginning... a very good place to start.... p = potential H = Hydrogen Bear with a bit of scientific explanation: pH is the measure of potential Hydrogen of any liquid indicated by its degree of concentration of Hydrogen ions. The lesser the concentration, the more potential there is for absorbing hydrogen atoms. This measurement is done on a logarithmic scale of 0 to 14, with 7 being neutral, as illustrated below. The higher the reading, the greater potential for absorbing hydrogen and therefore, more alkaline.
HOW Your Body's pH determines your health
You've undoubtedly heard something about the effect of your body's pH on your health in discussions at the health food store, or with friends, your doctor, or in a recent article or book you've read in your quest for better health. Generally speaking, your blood pH should be about 7.5. You can help determine the pH of your body by testing your saliva and urine. A healthy urinary pH can fluctuate between 6.0 and 6.5 in the morning and between 6.5 and 7.0 in the evening. A good range for saliva stays between 6.5 and 7.5. It is best to test your urine pH first thing in the morning, and your saliva pH at least one before eating or two hours after.
The pH of our body determines the health of our body! It's that simple. You've heard it before, but I'll say it again: "There is ONE DISEASE known to man: Toxicity." This toxicity is caused by acidic waste build-up. That's why it doesn't really matter what name you give to your sickness. The way to health is by the path of alkalizing and detoxifying. When you give your body the proper alkaline environment, it can heal itself. This has been demonstrated over and over again.
This concept of acid alkaline imbalance as the cause of disease is not new. In 1933, William Howard Hay, a New York doctor, published A NEW HEALTH ERA, in which he maintains that all disease is caused by "autointoxication" (self-poisoning), due to acid accumulation in the body:
"Now we depart from health in just the proportion to which we have allowed our alkalies to be dissipated by introduction of acid-forming food in too great amount... It may seem strange to say that all disease is the same thing, no matter what its myriad modes of expression, but it is verily so." -- William Howard Hay, M.D.
More recently, in the book ALKALIZE OR DIE, Dr. Theodore A. Baroody agrees:
"The countless names of illnesses do not really matter. What does matter is that they all come from the same root cause... too much tissue acid waste in the body! --- Theodore A. Baroody, N.D., D.C., Ph.D.
This makes perfect sense, since body pH determines the speed of our body's biochemical reactions. Look at the illustration again. Notice that it indicates that the greater the pH, the more resistance, and that lesser pH indicates there will be greater resistance. When resistance is greater, the speed of enzyme activity and electricity going through out bodies is slower. Our bodies should not run "hot and fast" like an acidic car battery does. We should be more like an alkaline flashlight battery, which runs slow and cool. source
Our body pH is determined by our choices: The way we live our lives, the level of unchecked stressors, the food and drink we put into our mouths, the air we breathe, what we use to heat, cool, and furnish our homes and workplaces, the products we put on our skin...most of these are choices we make.
An acidic body pH forces the body to borrow minerals such as calcium, magnesium and potassium from vital organs and bones in an attempt to neutralize this acidity. This condition is known as acidosis. Mild acidosis can go undetected for years, causing a myriad of sicknesses and disease, such as: cardiovascular damage, weight gain, obesity, diabetes, kidney stones, immune deficiency, cancer, hormone imbalance, premature aging, osteoporosis, joint and muscle pain, poor digestion, chronic fatigue and yeast/fungal overgrowth.
Below is a list of lifestyle choices that help determine body pH:
PARTIAL LIST OF ACID/ALKALINE HELPS
Acid-forming Alkaline-forming
Alcohol All fresh fruits
Black Pepper All raw vegetables
Breads All salad greens
Cake All sprouts
Canned and frozen food Apple cider vinegar
Chocolate Appreciation
Cigarettes Dates
Coffee Dried apricots
Common Make-up, skin & hair-care products Dried figs
Complaining Dulse
Conventional Household Cleaners Fresh, raw juice
Conventional Medications Fun
Conventional Mattresses Grapefruit
Cooked whole grains, except Millet and Brown Rice Joy
Dairy (butter, cheese, ice cream, milk, etc.) Lima Beans
Distilled vinegar Melons
Eggs Millet
Excessive Exercise Moderate Exercise
Foods cooked with oils Potatoes
Many New Fabrics and Carpets Raw Honey
Meat, fish, birds, shellfish Raw Nuts
Particleboard Raw Seeds
Pasta
Popcorn
Processed cereals
Soda crackers
Soft drinks
Sugar
Sulfured or glazed fruit
Tea (except Herbal)
Tofu and soy products
Wheat products
This should give you a pretty good idea. You are not expected to totally avoid all of the acidifying choices, but rather make sure you are balancing the harmful effects of them with enough good choices. Some do need to be totally avoided, such as soda/pop/soft drinks and white sugar. But, something like excessive exercise: If you are an athlete or just very physically active, you will be acidifying your body on a regular basis. You need to take measures to counteract this effect from the other side of the page. Health is balance.
What about parts of the body that should be acidic?
Keep in mind that when I say "body pH needs to be alkaline," I am referring to the blood and general body fluids. Not all body parts need to be alkaline. The mouth is alkaline, the stomach is very acidic. The small intestine is alkaline and the large intestine is again acidic. These are kept in balance mainly by the work of the pancreas. Eating and drinking alkaline foods will not disrupt the proper balance needed in the areas where the body has more acidic environments. Eating this way is, in fact, needed to keep things in balance. Eating and drinking foods which acidify, however, do throw off the necessary alkaline/acid balance. It reminds me of the way light cannot be overcome by darkness, but darkness can easily be overcome by the slightest bit of light. Alkalinity can be overcome by a small amount of acidity, but acidity needs a lot of alkalinity to be overcome by it. So, not a perfect comparison, but still cool!
Supplementation Suggestions
If you are in an urgent health situation that requires immediate alkalizing of your body, you have a number of choices of supplements to accomplish this. Calcium-hydroxyapatite or -malate, with Magnesium-glycinate, -aspartate or -lysinate, and potassium gluconate will pretty quickly get your body into an alkaline state. This will be only temporary, as long as you take the supplement, and is far from ideal for a number of reasons.
Cell Power is a product that has proven very helpful for many people. It delivers oxygen and nano-sized particles of food at the cellular level. You need to drink it pretty often and be consistent, but it can kill pathogens, fungus and parasites, as well as alkalize your body over time. It will not be as immediate, especially since you need to introduce it gradually, so as not to disrupt your body systems. Some individuals feel jittery at first. It is extremely concentrated - you mix just one drop per each 2 oz of water.
Himalayan Crystal Salt is very helpful in bringing about a pH balance. Our bodies need salt, but not the toxic chemical sold as "salt" in most stores. Click on Himalayan Crystal Salt and see the list of downloads on the left side of the page. This salt is a life saver, literally! I encourage you to start incorporating this salt into your diet. You will feel the difference. It allows your tissues to absorb the water it is dying for. It kills pathogens, viruses and parasites, as well. And it tastes so much better than conventional salt, sea salt and even Real Salt.
I've heard of individuals using baking soda to alkalize, but I would be very careful, since many baking sodas contain other toxic ingredients (as anti-caking agents). It will, however, give very quick results. If you choose this route, I suggest making sure yours contains just "sodium bicarbonate" and nothing else. I also would not think this a healthy long-term approach.
Since the body is comprised of over 70% water, the water you drink plays a huge role in your body's pH level. Drinking water which is on the acid side, which almost all water is, will not successfully flush your cells of toxins, nor bring enough oxygen and nutrients to your cells; therefore it causes a more acidic environment. Alkaline water does accomplish all this and more. Because it's imperative that we drink a good amount of water every day (at least 1/2 your weight in ounces), I have found that the most direct and natural way to assist the body's pH is to drink alkaline water.

WELCOME TO SUE'S NEWS 'N VIEWS December 2010
VITAMIN D
Sue Whitney 11-28-10
Vitamin D has long been known for its importance in bone health, but recent research is revealing many of its key roles in the body's immune functions. High on the list is its function as regulator of inflammation. Any chronic inflammation present throughout the body may very well be regulated by adequate Vitamin D stores. It is a “balancer” of inflammation; fanning the fire where immunity is necessary and putting it out where it becomes excessive. A good application of this has been seen when MS sufferers begin to receive additional amounts of Vitamin D. Plaque in the brain has been reduced, and vision improved, among other significant improvements.
Most or all immune functions are affected by the body's level of Vitamin D. A very exciting discovery, relating to this, occurred early this year. Though some researchers, natural health practitioners, and others in the medical field were becoming aware that Vitamin D levels were directly related to a person's immune function, it was not understood why. On March 7, the press was alerted to the pivotal discovery that shed a beam of flood-light on the answer to that question. Researchers now realize that the T-cells, one of a very important class of killer cells, have Vitamin D receptors! Little “antennae,” attached to the T-cells, are searching for Vitamin D. If they don't find any, they cannot mobilize. Ample amounts of Vitamin D are necessary in order to give the orders to these important cells that kill invaders and destroy mutant cells. A recent model put forth by a CA doctor, basically demonstrated that cancer can only develop in a vitamin-D deficient body.
And it’s no wonder, really, when you consider what vitamin D really is, because it’s far more than “just a vitamin.” Rather it is actually a pro-hormone, which aids in repair and maintenance, and multiple gene-regulatory functions in every part of your body. There is, in fact, compelling evidence that Vitamin D is vital for proper gene expression.
Research has also been clearly demonstrating, over the past three years in particular, that Vitamin D plays a vital role in the human body's brain chemistry. Depression is often alleviated by supplying ample amounts of this vitamin to the brain. Mental disorders, including , ADD, ADHD, social anxiety disorders, mild schizophrenia, autism, and dementia, including Alzheimer's show improvement with an increase in Vitamin D to the body. Please note that omega-3 fatty acids are necessary to get the nutrients to the brain, also.
A strong connection has been seen between Vitamin D levels and occurrence of Diabetes. In fact, the farther from the sun one lives, the greater the incidence of Type 2 Diabetes! Vitamin D deficiency is being recognized as an American health hazard by more and more doctors and researchers. A press release of an authoritative book on the subject states: " What do obesity, heart disease, depression, diabetes, and fibromyalgia have in common? The answer is vitamin D deficiency. More than 200 million Americans lack proper levels of this essential nutrient and, as a result, suffer from a host of daily annoyances, chronic conditions, and even life-threatening illnesses. In the landmark book THE VITAMIN D SOLUTION: A 3-Step Strategy to Cure Our Most Common Health Problem (Penguin/Hudson Street Press; April 1, 2010) Dr. Michael F. Holick identifies the causes of vitamin D deficiency, outlines why it is essential to our health, and provides a 3-step program to attain optimal levels of Vitamin D in our bodies." Read the entire press release.

Sunshine
The best source of vitamin D comes by exposure of our skin to the sun's rays. This production of vitamin D in the human body is the unique function of the skin, our body's largest organ. However, in our modern society, it doesn't happen as much, or as easily, as you might think. First, the skin has to be thick enough. Some parts, like the skin on our faces, is typically too thin to produce much of this nutrient, known as Vitamin D3 in this form, the pro-hormone, cholecalciferol, produced from cholesterol. (Another excellent reason, of many, NOT to try to reduce your cholesterol levels!!) Second, it depends on the angle of the sun's rays. This varies according to location, the time of year and time of day. It only works when the angle of the rays is less than 45° at its apex. A simple way to test this: stand with your back to a south-facing wall. Pace out your height and turn around to look at the length of your shadow. If your shadow does not reach the base of the wall, then the sun's angle is sufficiently high enough for your skin to make Vitamin D. When your shadow is too high on the wall, ozone is inhibiting the UVB rays from reaching your skin, so D can't be manufactured. Basically, for those of us that live in the area between the 30th and 45th lines of latitude, which is most of the US, it won't work unless a good amount of our body is exposed to the sun between the hours between 11:00 a.m. and 3:00 p.m. on a regular basis.
This process is not the same in every person, however. For instance, persons with light colored skin will be able to manufacture Vitamin D in greater quantities in less time than individuals with dark skin. Also, an obese person's body has a more difficult time converting Vitamin D in the skin, than a person of normal or low weight. Given that, persons who are obese or of dark skin will need a longer time in the sun, than a thin, light-skinned person, to produce the same amount of Vitamin D. The body can make about 20,000 IU of Vitamin D in the most ideal situations in about 20 minutes. It won't continue to produce it after that level, but will store it in the liver for a few days.
What About Skin Cancer?
I do not believe the sun causes skin cancer. I encourage you to research this on your own, and you will discover the vast amount of scientific evidence that proves otherwise, and a lack of evidence that would indicate the positive. The modern, acidic diet, insufficient in nutrients to nourish the body, due to many and various factors, is what I believe to be the true cause. When the body becomes acidic, toxicity is out of control, and vice versa. These are the true causes of cancer. If the body is sick, it is toxic and acidic. Conversely, the body can only be in health when it is alkaline. Cancer and pH There are many vegetables, such as collard, kale and swiss chard, which contain nutrients that protect the skin from damage due to excessive sun exposure These are also very alkalizing. Sunburn can be avoided by regularly eating many of these vegetables, and by taking practical steps such as gradually increasing time spent in the sun. Additionally, coconut oil can be used topically, as well as consumed, to promote healthy, damage-resistant skin. (My husband, a red-head, can endure time in the hot sun without getting burned, when he's applied coconut oil to his skin.) This is 100% safe for children. Coconut oil is anti-inflammatory, as well as anti-microbial. Many of the chemicals found in sun-screen formulas are proven carcinogens. (A note about Vitamin A and skin cancer: Research clearly indicates that foods rich in Vitamin A help prevent skin cancer. However, the news in March, 2010, that Vitamin A in the form of laboratory formed retinyl palmitate, can actually accelerate the growth of skin cancer, did not prevent manufacturers from releasing their many skin care products, including most sun blocks, which contain it. This illustrates yet another example of the problem of trying to replace naturally occurring nutrients with inferior laboratory formed copies.) Vitamin A retinyl palmitate and Cancer

General Guidelines for supplementation
Unless you get outside regularly during the sun's peak hours of the day, and/or eat ample amounts of the food sources above, you will most likely benefit from 2,000 to 10,000 IU per day of supplemental Vitamin D. The possibility of overdose does exist, but at very high levels: 600,000 IU per day by injection, for several days in a row, has been demonstrated to cause toxicity. However, some sensitive individuals have adverse reactions such as lethargy, weakness or low feelings, with daily supplementation only as high as 2,000 IU. I feel the chance of overdose is much less than the risks associated with low levels. Safe tanning beds or wall mounts, are also a good method to get your Vitamin D. Doctors order tests for Vitamin D levels for their patients almost routinely now. If yours has not been tested, I suggest you request it the next time you have an appointment. And make sure you find out “your numbers.” The minimum you want to see is “30.” A “good” level is “60.” “Ideal” is between “75 – 100.” Out of quite a few individuals, I've met just one in the past year who has not tested below “30.” You don't even have to have a doctor's appointment to get your Vitamin D levels checked. If you are familiar with my lectures, writings or general suggestions, you might be surprised to see that I am suggesting a supplement in the form of Vitamin D. You know that I consider supplements to be far inferior to food as a nutrient source, and that I consider most, in fact, to be quietly harmful in many cases. However, since I feel the need for Vitamin D is urgent and that it can be found in safe supplemental formulas, I do take it myself and encourage others to, also. It comes in a number of forms: liquid drops, drinkable liquids, softgels, capsules, and tablets. As always, when purchasing supplements, be willing to pay for quality. Check the label for inferior ingredients. Pay attention to "other ingredients", fillers and low quality capsule or tablet material. I, myself, choose supplements made from foods. Individuals with kidney disease, kidney stones, or taking digoxin or other cardiac glycoside drugs, should consult their physician before embarking on a supplemental regimen of Vitamin D.
